This is one of my most favorite breakfast ideas ever, berry breakfast pops.
Just a couple ingredients and endless possibilities, you can take this to-go on your way to work or have your breakfast outside, poolside. Greek yogurt + honey + fruit (granola optional) = berry breakfast popsicles. I’m pretty obsessed with popsicles, so of course I want to eat them for breakfast.
I started making these popsicles a few summers ago when I was pregnant. We were living in Chicago and our cute old house didn’t have central a/c. While I thought no big deal when we bought the house, turns out summers in Chicago can be quite brutal and pregnancy only amplified the heat. I would make big batches of these breakfast pops and grab one to eat on my way to work. The base was always the same, Greek yogurt sweetened with a little honey and the fruit would change. Blueberries, peaches, cherries, strawberries, raspberries or bananas are all good choices. Try these Iced Coffee Popsicle recipe for another summer treat.
The version shown here uses mixed frozen berries (strawberry, raspberry, blackberry and blueberry) with plain non-fat Greek yogurt and sprinkled with toasted coconut. Regular yogurt will work just as well and you can even use your favorite flavored fruit yogurt if you wish. The Greek yogurt is thicker and more filling (it has more protein) than traditional American yogurt, which makes it my preference. Berry Breakfast Popsicles
1 cup greek yogurt
1 cup mixed berries (fresh or frozen)
2 tsp honey (or to taste)
4 tbs toasted coconut
To make: Smash fruit in a bowl and mix lightly with yogurt and honey. Taste for sweetness and add more sweeter if desired. Spoon into popsicle molds and insert popsicle sticks. Sprinkle ends with toasted coconut and freeze overnight before serving.
